White BBQ Chicken Grilled Cheese

White BBQ Chicken Grilled Cheese

Ingredients

  • 1 cup Schnucks mayonnaise
  • 1 tbsp. Schnucks apple cider vinegar
  • 1 tsp. horseradish
  • 1/2 tsp. Schnucks garlic powder
  • 2 cups Schnucks shredded rotisserie chicken
  • 2 tbsp. Schnucks butter, softened
  • 8 slices Schnucks sourdough bread
  • 1 1/2 cups Schnucks finely shredded Italian cheese, divided
  • 1/4 cup Schnucks dill pickle chips
  • 1/4 cup roasted red bell pepper strips

Instructions

  1. In a small bowl, whisk together mayonnaise, apple cider vinegar, horseradish and garlic powder until smooth. Fold in rotisserie chicken, tossing until evenly coated.
  2. Heat a large skillet over medium heat. Butter 1 side of each bread slice and transfer 4 slices, butter side down, to skillet. Evenly top slices with half the cheese and the chicken mixture, pickles and roasted red peppers. Sprinkle with remaining cheese.
  3. Top with remaining bread slices,
  4. butter side up, and press gently. Cook until golden brown and cheese is fully melted, 3–4 minutes per side. Remove from heat and slice diagonally. Serve warm.
