Veggie-Loaded Meatloaf

Ingredients
- 3/4 cup finely chopped mushrooms
- 3/4 cup finely chopped cauliflower
- 3/4 cup shredded carrots
- 1 lb. lean ground turkey
- 1/2 cup Schnucks old-fashioned oats
- 1 large Schnucks egg
- 6 tbsp. no-sugar-added ketchup, divided
- 1 tbsp. Schnucks Worcestershire sauce
- 1 tsp. Schnucks garlic powder
- 1 tsp. Schnucks onion powder
- 1/2 tsp. kosher salt
- 1 tbsp. Schnucks apple cider vinegar
- 1 tsp. Schnucks Dijon mustard
Instructions
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
- Place mushrooms, cauliflower and carrots in a blender or food processor. Pulse until finely chopped.
- In a large bowl, combine turkey, vegetable mixture, oats, egg, 4 tablespoons ketchup, Worcestershire sauce, garlic powder, onion powder and salt. Mix just until combined. Shape mixture into an 8-inch loaf on prepared baking sheet.
- In a small bowl, whisk together remaining 2 tbsp. ketchup, vinegar and Dijon. Brush half of glaze over meatloaf. Bake 35 minutes. Brush with remaining glaze and continue baking until internal temperature reaches 165 degrees, 15–20 minutes longer. Let meatloaf rest 10 minutes before slicing and serving.
