Veggie Foil Packets

Ingredients
- 1 medium yellow squash, diced
- 1 medium zucchini, diced
- 1 orange bell pepper, diced
- 1 1/2 cups cherry tomatoes, halved
- 1/2 medium red onion, sliced
- 1 garlic clove, minced
- 1 tsp. Italian seasoning
- 2 tsp. Schnucks olive oil
- 1 tbsp. chopped fresh parsley
- salt to taste
- pepper to taste
Instructions
- Place all ingredients in a large bowl and mix thoroughly.
- Lay out four approximately 12x12-inch pieces of heavy duty aluminum foil. Divide the veggies between the foil. Make into a packet (see options below).
- Place the packets on grill over indirect heat and cover. Cook for 5–7 minutes, rotate packets, and cook for 5 minutes more until veggies are tender. Carefully fold back the foil; serve immediately.
