Upside-Down Carrot Banana Bread

Ingredients
- 6-8 small carrots, trimmed and halved
- 2 tbsp. Schnucks unsalted butter
- 1/4 cup honey
- 1 box Pillsbury Banana Quick Bread Miix
- 2/3 cup vegetable oil
- 1/2 cup grated carrot
- 2 eggs
- 1 cup water
Instructions
- Preheat oven to 350 degrees; move rack to middle position. Line an 8x4-inch loaf pan with parchment paper and coat with nonstick cooking spray.
- In a large bowl, microwave Schnucks unsalted butter and honey until melted; stir to combine. Add the halved carrots and toss to coat; arrange in an even layer along bottom of the prepared pan and drizzle any remaining honey butter over top.
- In another large bowl, whisk together Pillsbury Banana Quick Bread Mix, water, vegetable oil, grated carrot and eggs; pour into pan over carrots.
- Bake about 1 hour or until a toothpick inserted in center of loaf comes out clean.
- Let cool 20 minutes before removing from pan. Serve warm or cool.
