Tuna and Cabbage Salad Sandwiches
Take your tuna salad sandwich to the next level with the healthy addition of cabbage!

Ingredients
- 1 can (12 oz.) chunk light tuna in water, drained
- 2 cups finely shredded green cabbage
- 1/4 cup green onion, finely sliced
- 1 tbsp. parsley, chopped
- 1 tbsp. lemon juice
- 1 tsp. sweet and spicy mustard
- 1/4 cup plain nonfat greek yogurt
- 8 slices whole grain bread
Instructions
- In a medium bowl, shred tuna with a fork. Add the next six ingredients and stir to combine. Season with salt and pepper if desired.
- Cover and let sit for 15 minutes, stirring occasionally.
- Divide among 4 slices of bread, top with remaining bread. Serve immediately.
