Super-Easy Tomato and Spinach Pasta

Ingredients
- 8 oz. Barilla Protein Plus penne pasta
- 1 tbsp. Schnucks olive oil
- 2 tsp. minced garlic
- 1 pint cherry tomatoes (about 2 cups), halved
- 5 oz. fresh spinach (about 5 cups packed)
- 1/4 cup Schnucks shaved Parmesan cheese
Instructions
- Cook pasta according to package directions. Drain, reserving 1/4 cup pasta water.
- Meanwhile, in a skillet over medium heat, add oil and garlic. Cook, stirring, until fragrant, about 30 seconds. Add cherry tomatoes; cook, stirring occasionally, until beginning to burst, 3–5 minutes. Using the back of a spoon, mash about one-fourth of tomatoes.
- Stir in spinach and cook until wilted, 1–2 minutes. Season with salt and pepper, if desired. Add cooked pasta and reserved pasta water; toss to coat. Top with Parmesan and serve immediately or pack in a lunch box. Pasta can be served warm or chilled.
