Sticky Oven-Braised Pork Ribs and Charred Potatoes

Ingredients
- 2 lb. pork ribs
- 1 tsp. Schnucks paprika
- 1 tsp. Schnucks garlic powder
- 2 lb. russet potatoes, cut into 1-inch pieces
- 2 tbsp. Schnucks olive oil, divided
- 2 tbsp. Schnucks packed brown sugar
- 1 tbsp. Schnucks Dijon mustard
- 1 tbsp. lemon juice
- 1 1/2 cups cherry tomatoes, halved
- 1/4 cup chopped thyme
Instructions
- Preheat oven to 325 degrees.
- Place ribs on a foil-lined baking sheet. Season with paprika, garlic powder, and, if desired, salt and pepper. Cover tightly with foil and bake 1 hour 45 minutes, or until fork tender.
- Increase oven temperature to 425 degrees. Toss potatoes and tomatoes with 1 tbsp. oil and spread on a second baking sheet. Roast 25–30 minutes, stirring halfway through, until golden brown.
- In a small bowl, whisk together brown sugar, Dijon and lemon juice. Remove foil from ribs and brush with glaze. Return to oven, uncovered, until caramelized, about 10 minutes.
- Toss potatoes with remaining oil and thyme. Serve alongside ribs.
