Sticky Oven-Braised Pork Ribs and Charred Potatoes

Ingredients

  • 2 lb. pork ribs
  • 1 tsp. Schnucks paprika
  • 1 tsp. Schnucks garlic powder
  • 2 lb. russet potatoes, cut into 1-inch pieces
  • 2 tbsp. Schnucks olive oil, divided
  • 2 tbsp. Schnucks packed brown sugar
  • 1 tbsp. Schnucks Dijon mustard
  • 1 tbsp. lemon juice
  • 1 1/2 cups cherry tomatoes, halved
  • 1/4 cup chopped thyme

Instructions

  1. Preheat oven to 325 degrees.
  2. Place ribs on a foil-lined baking sheet. Season with paprika, garlic powder, and, if desired, salt and pepper. Cover tightly with foil and bake 1 hour 45 minutes, or until fork tender.
  3. Increase oven temperature to 425 degrees. Toss potatoes and tomatoes with 1 tbsp. oil and spread on a second baking sheet. Roast 25–30 minutes, stirring halfway through, until golden brown.
  4. In a small bowl, whisk together brown sugar, Dijon and lemon juice. Remove foil from ribs and brush with glaze. Return to oven, uncovered, until caramelized, about 10 minutes.
  5. Toss potatoes with remaining oil and thyme. Serve alongside ribs.
