Spicy Tuna Cucumber Bites
This cucumber bite recipe packs a punch with spicy sriracha, creamy mayonnaise and satisfying tuna. The bites combine a blend of macronutrients to keep you full for longer.

Ingredients
- 1 large English cucumber, cut into 16 slices
- 1 (12 oz.) can chunk light tuna in water, drained
- 3 tbsp. Schnucks nonfat plain Greek yogurt
- 2 tbsp. chopped green onion
- 1 tbsp. sriracha sauce, plus more for garnish
- 1/2 tsp. garlic powder
- 1/2 tsp. smoked paprika
- 2 tbsp. chopped fresh chives (optional)
Instructions
- In a medium bowl, add tuna, yogurt, green onion, sriracha, garlic powder and smoked paprika. Stir to combine, breaking up tuna chunks into smaller pieces. Season with salt and pepper, if desired.
- Arrange cucumber slices on a platter; spoon 1 tablespoon tuna mixture onto each. Garnish with chives (if using) and a drizzle of sriracha. Serve chilled.
