Smoky Honey Chicken Thighs With Mashed Potatoes

Ingredients
- 2 lb. russet potatoes, peeled & quartered
- 1/2 cup Schnucks milk
- 1 cup Schnucks grated Parmesan cheese
- 2 tbsp. Schnucks butter
- 1 tsp. Schnucks paprika
- 1/2 tsp. Schnucks garlic powder
- 1 tbsp. Schnucks olive oil
- 2 lb. bone-in, skin-on chicken thighs
- 1 tbsp. Schnucks honey
- 2 tbsp. chopped fresh parsley, for garnish
Instructions
- In a large pot, cover potatoes with cold water. Bring to a boil over medium-high heat; cook until fork-tender, 10–15 minutes. Drain and return to pot. Add milk, Parmesan and butter; mash until smooth. Cover to keep warm.
- Meanwhile, season chicken with paprika, garlic powder and, if desired, salt and pepper.
- Heat oil in a large skillet over medium. Add chicken; cook until browned and internal temperature reaches 165 degrees, 5–6 minutes per side. Drizzle with honey in final minute of cooking and turn to coat. Serve immediately with mashed potatoes, garnished with parsley.
