Smoked BLT Pasta Salad

Ingredients

  • 16 oz. Schnucks cavatappi
  • 2 Roma tomatoes, chopped
  • 2 tbsp. Schnucks olive oil
  • 3/4 tsp. Schnucks liquid smoke
  • 2 tsp. minced garlic
  • 1 tsp. Schnucks capers, drained
  • 1 2/3 cup Schnucks mayonnaise
  • 1/4 cup fresh parsley, chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 cup thinly sliced red onion
  • 1/2 cup Schnucks shredded Parmesan cheese
  • 8 slices Schnucks thick-cut bacon, cooked and chopped
  • 2 cups butter lettuce

Instructions

  1. Cook pasta according to package directions. Drain.
  2. In a blender or food processor, add Roma tomatoes, oil, liquid smoke, garlic and capers. Pulse until slightly chunky. Season with salt, if desired.
  3. Add mayonnaise and parsley. Pulse until smooth, 4–5 times.
  4. In a large bowl, add pasta, cherry tomatoes, onion, Parmesan, bacon and Roma tomato mixture. Gently toss until evenly coated. Chill 10 minutes.
  5. Fold in lettuce just before serving to keep it crisp.

Chef Tip: Turn this recipe into King of the Hill Pasta Salad! Cook a 16 ounce package Schnucks cavatappi 8–10 minutes; drain and rinse under cold water. In a blender, add 1/2 cup Schnucks mayonnaise, 2 tablespoons olive oil, 3 tablespoons pepperoncini brine, 1 teaspoon minced garlic, 1 teaspoon Schnucks Dijon mustard, 1/4 cup Schnucks fresh parsley and 1/4 teaspoon salt. Blend until smooth. In a large bowl, add cavatappi, 4 oz. chopped Schnucks Genoa salami, 4 ounces chopped roast beef, 4 ounces chopped ham, 4 ounces diced provolone, 1 pint halved cherry tomatoes, 1/2 cup diced red onion and ½ cup sliced pepperoncini. Add dressing and toss to coat. Fold in 2 cups shredded romaine and chill 10–15 minutes before serving. Serves 6.
