Sheet Pan Tilapia and Asparagus

Sheet Pan Tilapia and Asparagus

Ingredients

  • 4 tilapia fillets, patted dry
  • 1 lb. asparagus, ends trimmed
  • 1 lemon, juiced (about 2 tbsp. juice)
  • 1 tsp. Kosher salt
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. Schnucks black pepper
  • 1/4 tsp. Schnucks garlic powder
  • 4 tbsp. Schnucks salted butter, melted
  • 1 tbsp. chopped fresh parsley, for garnish

Instructions

  1. Preheat oven broiler with a rack in middle position. Line a large sheet pan with foil and lightly coat with cooking spray. Arrange fish on one half of the pan and asparagus on the other.
  2. In a bowl, whisk together lemon juice, salt, paprika, pepper, garlic powder and melted butter. Drizzle over fish and asparagus.
  3. Bake, tossing asparagus once, until fish’s internal temperature reaches 145 degrees, 6–8 minutes. Garnish with parsley and, if desired, serve with lemon wedges.
