Sesame Superfood and Lentil Salad
This hearty and nutritious salad is packed with protein from lentils and a ready-to-eat superfood veggie blend, all tossed in a savory sesame dressing for a quick, satisfying meal.

Ingredients
- 1 cup Schnucks lentils
- 2 cups Schnucks fresh superfood vegetable blend
- 2 red bell peppers, thinly sliced
- 1/4 cup Schnucks sesame seeds
- 1 tbsp. sesame oil
- 2 tbsp. Schnucks less-sodium soy sauce
Instructions
- Cook lentils according to package directions and let cool slightly.
- In a large bowl, add lentils, superfood blend, bell pepper and sesame seeds. Season with salt and black pepper, if desired.
- In a small bowl, whisk together sesame oil and soy sauce. Drizzle over salad and toss to coat. Serve warm or cold.
