Rice Remix Casserole
Save that leftover rice and a little cash with this recipe! Combining rice with a few staples like canned cream of chicken soup, sour cream, Dijon, ham and veggies, you can have a delicious, comforting dinner ready in a pinch.

Ingredients
- 1 (10 oz.) can Schnucks healthy cream of chicken soup
- 1/2 cup Schnucks sour cream
- 1 tbsp. Schnucks chopped fresh parsley or 1 tsp. dried parsley, plus more for garnish
- 1 tsp. Schnucks Dijon mustard
- 3 cups Schnucks long-grain rice, cooked
- 1 medium carrot, peeled and shredded
- 1 medium Roma tomato, diced
- 3/4 cup Schnucks finely shredded Italian six-cheese blend
- 1/2 cup diced ham, cooked
Instructions
- Preheat oven to 350 degrees. Coat an 8x8-inch casserole dish with cooking spray.
- In a large mixing bowl, stir together soup, sour cream, parsley and Dijon. Season with salt and pepper, if desired.
- Stir in rice, carrot, tomato and 1/4 cup cheese. Spread in an even layer in prepared dish. Top with ham and remaining cheese.
- Bake until cheese is melted and beginning to brown, 20–25 minutes. Remove from oven and let rest 10 minutes.
Chef Tip: Customize this casserole by swapping out the carrots and tomato for other veggies you already have at home. Spinach, onions, zucchini and bell peppers also work well.
