Red, White and Blue Icebox Pie

Ingredients
- 1 1/2 cups graham cracker crumbs (about 12 sheets)
- 6 tbsp. Schnucks unsalted butter, melted
- 1 1/2 cups Schnucks heavy whipping cream
- 8 oz. Schnucks cream cheese, softened
- 1/2 cup Schnucks powdered sugar
- 1 tsp. Schnucks pure vanilla extract
- 2 cups Driscoll berries, divided
- strawberries
- raspberries
- blackberries
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, stir together graham cracker crumbs and melted butter until evenly moistened. Press mixture firmly into the bottom and up the sides of a 9-inch pie plate. Bake until set and lightly golden, 8–10 minutes. Let cool completely, about 30 minutes.
- In a large bowl, beat together cream cheese, powdered sugar and vanilla until smooth. In another large bowl, beat heavy cream until stiff peaks form; gently fold into cream cheese mixture until fully combined. In a medium bowl, mash 1 1/2 cups of berries, then fold them into the filling until just combined.
- Spoon filling evenly into prepared crust. Refrigerate, covered, until firm, at least 4 hours or up to 3 days. Top with remaining whole berries just before serving.
