Protein-Packed Baked Mac 'n Cheese

Protein-Packed Baked Mac 'n Cheese

Ingredients

  • 1 (14.5 oz.) pkg. high-protein elbow pasta
  • 1 (13 oz.) pkg. smoked sausage, sliced
  • 5 tbsp. Schnucks unsalted butter, divided
  • 4 tbsp. Schnucks flour
  • 1 tbsp. Schnucks Dijon mustard
  • 1 tsp. smoked paprika
  • 3 cups Schnucks 2% milk
  • 4 cups Schnucks shredded mild cheddar cheese
  • 1 (12 oz.) pkg. Schnucks frozen green peas
  • 1/2 cup Schnucks plain panko breadcrumbs

Instructions

  1. Preheat oven to 400 degrees and coat a 9x13-inch baking dish with cooking spray.
  2. Cook pasta according to package directions. Drain.
  3. In a large pot over medium-high heat, cook sausage, turning once, until browned, 2–3 minutes. Transfer to a plate.
  4. In same pot, reduce heat to medium and melt 4 tablespoons butter. Whisk in flour until smooth, then whisk in Dijon, paprika and milk until fully incorporated. Continue cooking, stirring occasionally, until mixture thickens slightly and coats the back of a spoon, 3–4 minutes. Remove from heat and stir in cheese until smooth. Fold in pasta, sausage and peas; transfer to prepared baking dish.
  5. In a small bowl, melt remaining 1 tablespoon butter. Stir in panko, then sprinkle over mac and cheese. Bake, uncovered, until golden and bubbly, 12–15 minutes. Let cool slightly before serving.

Chef tip: To meal prep, cook as described and let it cool completely before refrigerating. Store leftovers in an airtight container up to 4 days. Reheat mac 'n cheese in the microwave 1-2 minutes, stirring halfway. Add a splash of milk for creaminess.


Pro tip: Clean out the cheese drawer! Swap in up to 1 cup of any shredded cheese that you have on hand, such as Gouda, Monterey Jack, mozzarella or Italian blend for some of the cheddar. Add gradually to keep the sauce smooth.
