Pineapple Pork Chops with Green Beans and Rice

Ingredients
- 4 (5-6 oz. ea.) fresh center-cut boneless pork chops
- 1 tbsp. Schnucks extra virgin olive oil
- 4 cloves garlic, peeled and crushed
- 2 cups fresh pineapple, cut into cubes
- 1 (12 oz.) bag green beans
- 1 cup Schnucks long grain brown and wild rice
Instructions
- Cook rice according to package directions and set aside.
- Season pork chops with salt and pepper, if desired, and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes. Add pork chops to skillet and cook on one side for 4-5 minutes until golden.
- Flip the pork chops and push them to outside of the skillet. Add the pineapple chunks and green beans to the center.
- Continue cooking for 3-5 minutes, until the pork chops reach an internal temperature of 145°F, the green beans soften and the pineapple caramelizes slightly.
- Remove from heat and let rest for 5 minutes.
- Serve pork chops with pineapple and green beans over wild rice.
