Pineapple Pork Chops with Green Beans and Rice

Pineapple Pork Chops with Green Beans and Rice

Ingredients

  • 4 (5-6 oz. ea.) fresh center-cut boneless pork chops
  • 1 tbsp. Schnucks extra virgin olive oil
  • 4 cloves garlic, peeled and crushed
  • 2 cups fresh pineapple, cut into cubes
  • 1 (12 oz.) bag green beans
  • 1 cup Schnucks long grain brown and wild rice

Instructions

  1. Cook rice according to package directions and set aside.
  2. Season pork chops with salt and pepper, if desired, and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes. Add pork chops to skillet and cook on one side for 4-5 minutes until golden.
  4. Flip the pork chops and push them to outside of the skillet. Add the pineapple chunks and green beans to the center.
  5. Continue cooking for 3-5 minutes, until the pork chops reach an internal temperature of 145°F, the green beans soften and the pineapple caramelizes slightly.
  6. Remove from heat and let rest for 5 minutes.
  7. Serve pork chops with pineapple and green beans over wild rice.
