Pantry-Powered Protein Sandwich

Ingredients
- 1 (15 oz.) can white beans, drained and rinsed
- 1 oz. crumbled feta cheese
- 2 tbsp. Schnucks olive oil
- 2 tbsp. minced red onion
- 2 tbsp. fresh parsley, chopped (or 1 tbsp. dried parsely)
- 1 tbsp. roasted red peppers, chopped
- 1 tbsp. lemon juice
- 1 tbsp. red wine vinegar
- 1 tsp. Schnucks honey
- 1/4 tsp. dried oregano
- 4 slices toast
Instructions
- In a medium bowl, combine all ingredients besides toast. Season with salt and pepper, if desired.
- Cover and refrigerate at least 30 minutes.
- Serve over toast.
