One-Skillet Lemon Salmon and Orzo

Ingredients
- 1 lemon
- 2 tbsp. Schnucks olive oil
- 6 skinless salmon fillets (about 1 1/2 lbs. total)
- 2 tsp. minced garlic
- 1 cup uncooked orzo pasta
- 2 cups Schnucks 33% less-sodium chicken broth
- 3 cups packed fresh spinach
Instructions
- Halve lemon; juice 1 half and cut the other into slices.
- Heat oil in a large skillet over medium. If desired, season salmon with salt and pepper, then transfer to skillet. Cook until lightly browned, 3-4 minutes per side. Transfer to a plate.
- In same skillet, stir in garlic and cook until fragrant, about 30 seconds. Stir in orzo and cook until lightly toasted, 1–2 minutes. Stir in chicken broth and lemon juice and bring to a simmer.
- Cook, stirring occasionally, until orzo is tender and most liquid is absorbed, 8–10 minutes. Stir in spinach until wilted, then top with salmon and lemon slices.
- Cook, covered, until salmon reaches desired doneness, 3–5 minutes. Remove from heat and serve immediately.
Chef tip: To meal prep, cook as described and let the dish cool completely before refrigerating. Store leftovers in an airtight container up to 3 days. Reheat in the microwave in 30-second intervals, covered, 1-2 minutes total.
