Nourishing Pork and Barley Soup

Ingredients
- 1 tbsp. Schnucks olive oil
- 1 small yellow onion, diced (about 1/2 cup)
- 1 lb. 90%-lean ground pork
- 1 (14.5 oz.) can Schnucks no-salt-added sliced carrots
- 1/2 cup diced celery, plus leaves for garnish
- 2 cups Schnucks 33%-less-sodium chicken broth
- 1 (14.5 oz.) can Schnucks no-salt-added diced tomatoes, with juice
- 1 1/2 cups water
- 1 cup quick-cook barley
- 1/2 tsp. Schnucks ginger
- 1/4 tsp. Schnucks cumin
Instructions
- In a large pot, heat oil over medium. Add onion; cook stirring occasionally, until soft, 2–3 minutes. Add pork, carrots and celery; cook, stirring, 6–8 minutes more.
- Stir in remaining ingredients and, if desired, season with salt and pepper. Bring to a boil. Cover and simmer about 40 minutes, stirring occasionally. Serve warm, garnished with celery leaves.
