Lemony Chicken

Lemony Chicken

Ingredients

  • 1/2 cup Schnucks butter
  • 2 tbsp. lemon juice
  • 4 Schnucks fresh boneless skinless chicken breasts
  • 8 Yukon Gold potatoes, quartered
  • 1 bunch asparagus, cut into 2-inch pieces
  • 1 lemon, sliced, for garnish
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 425 degrees. In a small saucepan, melt butter over medium heat. Stir in lemon juice, salt and pepper. Cover and set aside.
  2. In a large baking dish, toss chicken and potatoes with 4 tablespoons butter mixture. Season with additional salt and pepper, if desired. Add to oven and cook for 20 minutes.
  3. Stir in asparagus and bake until potatoes are tender, asparagus is cooked through and chicken reaches an internal temperature of 165 degrees, about 8-10 additional minutes. Meanwhile, reheat remaining butter mixture over medium heat.
  4. Remove from oven; top with remaining sauce and lemon.

Air Fryer Instructions

This recipe should be halved to 2 servings for the best air fryer results. Altered ingredients and full instructions are below.

  • 1/4 cup Schnucks butter
  • 1 tbs. lemon juice
  • 3 tbs. olive oil, divided
  • 2 Schnucks fresh boneless skinless chicken breasts
  • 4 Yukon Gold potatoes, cut into 2” pieces
  • 1/2 bunch asparagus, woody ends trimmed
  • 1 lemon, sliced, for garnish
  • salt and pepper to taste

  1. Melt butter over medium heat. Stir in lemon juice, salt and pepper. Cover and set aside.
  2. Toss the potatoes in 1 tablespoon olive oil and season with salt and pepper. Place in basket of air fryer and cook at 375°F for 12 minutes.
  3. Rub chicken breasts with olive oil and season with salt and pepper. After the potatoes have been in for 12 minutes, add chicken breasts on top, smooth side down and continue to cook at 375°F for 10 minutes. Flip the chicken so the smooth side is up.
  4. Toss asparagus in remaining 1 tablespoon olive oil and season with salt and pepper. Place in the basket around the chicken, cook for another 6 minutes.
  5. Once done, the chicken should have an internal temperature of 165°, remove from the air fryer and serve, topping with butter sauce and lemon.
