4 Serving(s)

Ingredients
- 4 cups leftover stuffing
- 4 tbsp. Schnucks butter, melted
- 4 large Schnucks eggs
- 2 cups sliced leftover turkey or ham, warmed
- 1 cup leftover turkey gravy, warmed
- 2 tbsp. chopped fresh chives
Instructions
- Preheat a waffle maker and coat with cooking spray.
- In a large bowl, toss stuffing with butter. Divide into four portions and firmly press one portion into waffle maker. Cook 6–8 minutes or until crisp and golden brown. Repeat with remaining stuffing.
- Meanwhile, fill a medium saucepan with water and bring to a gentle simmer. Stir in vinegar. Crack each egg into a small bowl, then gently slide into simmering water. Cook 3–4 minutes or until whites are set and yolks are still runny. Remove with a slotted spoon.
- Top each stuffing waffle with turkey, one poached egg and gravy. Garnish with chives and season with salt and pepper, if desired. Serve immediately.
Chef’s Tip
If stuffing seems dry, stir in one beaten egg to help it hold together. No waffle maker? Shape stuffing into patties and cook in a lightly greased skillet over medium 4-5 minutes per side or until crisp and golden.
