Kernel Season's Elote Salad
Pan roasted corn and crunchy veggies come together in a savory, creamy salad with all the flavors of Mexican street corn.

Ingredients
- 2 tbsp. Kernel Season's Olive Oil Movie Theater Butter Flavored Oil Blend
- 2 tbsp. Kernel Season's Mexican Street Corn popcorn seasoning
- 1 (16 oz.) bag Schnucks frozen corn
- 3 tbsp. mayonnaise (best with Duke's Real Mayonnaise)
- 1/4 cup fresh cilantro, chopped
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 limes, cut to wedges
- 1 cup cojita or feta cheese, crumbled
Instructions
- Heat oil in a sauté pan over medium-high heat. Add frozen corn and sauté until lightly browned, about 10 minutes. Transfer corn to a bowl.
- Combine seasoning and mayonnaise. Add mayonnaise mixture, bell pepper, and onion to corn and stir thoroughly. Chill for at least 1 hour, then stir in cilantro and cheese.
- Serve as a salad or side dish, or try with corn chips as a dip. Serve with lime wedges for a fresh squeeze of lime.
