Italian White Bean Salad

Italian White Bean Salad

Ingredients

  • 2 (15.5 oz.) cans Schnucks cannellini beans, drained and rinsed
  • 1/2 cup roasted red bell peppers, diced
  • 1/4 cup chopped fresh basil, or 1 tbsp. dried
  • 1/4 cup fresh Italian parsley, or 1 tbsp. dried
  • 1 large shallot, finely diced
  • 1 tbsp. minced garlic
  • 1/2 cup Schnucks extra-virgin olive oil
  • 1 lemon, zested and juiced (about 2 tbsp. juice)
  • 1/4 tsp. Schnucks red pepper flakes

Instructions

  1. In a large mixing bowl, stir together all ingredients. Season with salt and black pepper, if desired. Refrigerate, covered, at least 2 hours or up to 24 hours. Serve cold. Salad keeps up to 4 days refrigerated in an airtight container.
