Holiday Turkey & Mushroom Wellington
Wrap your holiday feast in golden, flaky pastry for an impressive main course that’s surprisingly simple to assemble. Tender turkey breast and savory mushrooms pair beautifully with a sweet cranberry topping.
6 Serving(s)

Ingredients
- 1 (24 oz.) pkg. turkey breast tenderloins
- 2 tbsp. Schnucks canola oil, divided
- 1 tbsp. Schnucks Dijon mustard, plus 1 tsp., divided
- 1 (8 oz.) pkg. Schnucks baby bella mushrooms, finely chopped
- 1 small yellow onion, finely chopped
- 1 tsp. Schnucks dried thyme
- 1 (17.25 oz.) pkg. frozen puff pastry, thawed
- 1 large Schnucks egg
- 1 tbsp. water
- 1 cup Schnucks chicken stock
- 1/3 cup Schnucks whole-berry cranberry sauce
Instructions
- Preheat oven to 400 degrees. Line a sheet pan with parchment paper. Pat turkey dry; season with salt and pepper, if desired.
- In a large skillet, heat 1 tablespoon oil over medium-high. Add turkey; cook 2–3 minutes per side or until lightly browned. Transfer to a plate; cool at room temperature 10 minutes. Brush with 1 tablespoon mustard.
- In same skillet, heat remaining oil over medium. Add mushrooms, onion and thyme; cook, stirring often, 10–12 minutes or until vegetables are tender and moisture has evaporated. Cool 10 minutes.
- On a lightly floured surface, roll pastry into a rectangle large enough to enclose turkey. Spread mushroom mixture down center; arrange turkey over mixture. Fold pastry around turkey; pinch seams and ends to seal. Transfer seam-side down to prepared sheet pan.
- In a small bowl, whisk together egg and water; brush over pastry. Use remaining pastry sheet to create a lattice topping. Cut three small slits in top. Bake 35–40 minutes or until pastry is golden brown and internal temperature of turkey reaches 165 degrees. Let rest 15 minutes.
- Meanwhile, in a small saucepan, stir together stock, cranberry sauce and remaining mustard. Bring to a simmer over medium-low; cook, stirring occasionally, 7–10 minutes or until slightly thickened. Serve Wellington with cranberry sauce.
Chef’s Tip
To top Wellington with a lattice pattern, roll out one sheet of puff pastry to fully enclose and seal the filling. Cut staggered rows of vertical slits across the second sheet, alternating their placement so the slits line up with the gaps in the previous row. Gently stretch the edges outward to reveal a honeycomb pattern, then drape over the wrapped Wellington.
