Greek Lemon and Oregano Halloumi Skewers

These vegetarian-friendly skewers offer a savory, golden bite that’s perfect for summer entertaining. Grilled alongside red peppers and onions, the halloumi cheese stays firm and satisfying for a light, Mediterranean-style main.

Greek Lemon and Oregano Halloumi Skewers

Ingredients

  • 12 oz. halloumi cheese, cut into 1 inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1-inch pieces
  • 2 tbsp. Schnucks olive oil
  • 1 lemon, zested & juiced (about 1 tsp. zest & 3 tbsp. juice), divided
  • 6 metal or bamboo skewers (if bamboo, first soak in water)
  • 1 1/2 tsp. fresh oregano, for garnish

Instructions

  1. Preheat grill to medium-high (375–400 degrees). In a large bowl, add halloumi, bell pepper and red onion. Drizzle with oil and 1 tbsp. lemon juice. Toss to coat. Alternating pieces, thread cheese and vegetables onto skewers.
  2. Grill, turning carefully, until halloumi is golden and veggies are lightly charred, 2–3 minutes per side. Transfer to a platter and garnish with lemon zest, oregano and remaining lemon juice. Season with salt and black pepper, if desired.

Chef Tip: Skip the grill and heat a large skillet over medium. Cook skewers in batches, turning occasionally, until halloumi is golden, about 6 minutes. Or you could use an air fryer!
