Greek Lemon and Oregano Halloumi Skewers
These vegetarian-friendly skewers offer a savory, golden bite that’s perfect for summer entertaining. Grilled alongside red peppers and onions, the halloumi cheese stays firm and satisfying for a light, Mediterranean-style main.

Ingredients
- 12 oz. halloumi cheese, cut into 1 inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into 1-inch pieces
- 2 tbsp. Schnucks olive oil
- 1 lemon, zested & juiced (about 1 tsp. zest & 3 tbsp. juice), divided
- 6 metal or bamboo skewers (if bamboo, first soak in water)
- 1 1/2 tsp. fresh oregano, for garnish
Instructions
- Preheat grill to medium-high (375–400 degrees). In a large bowl, add halloumi, bell pepper and red onion. Drizzle with oil and 1 tbsp. lemon juice. Toss to coat. Alternating pieces, thread cheese and vegetables onto skewers.
- Grill, turning carefully, until halloumi is golden and veggies are lightly charred, 2–3 minutes per side. Transfer to a platter and garnish with lemon zest, oregano and remaining lemon juice. Season with salt and black pepper, if desired.
Chef Tip: Skip the grill and heat a large skillet over medium. Cook skewers in batches, turning occasionally, until halloumi is golden, about 6 minutes. Or you could use an air fryer!
