Garlicky Grilled Hasselback Potatoes
These impressive, fanned potatoes are brushed with a savory garlic-oil mixture and grilled until perfectly soft inside, while remaining crispy outside. They are a versatile side dish for Father’s Day, especially when customized with your favorite toppings like sour cream or bacon.

Ingredients
- 4 large garlic cloves, thinly sliced
- 3 tbsp. Schnucks olive oil, divided
- 4 medium Russet potatoes, scrubbed
- 2 tbsp. Schnucks grated Parmesan cheese
Instructions
- Preheat an outdoor grill to medium-high (375–400 degrees). In a small bowl, stir together garlic and 2 tablespoons of oil.
- Carefully cut a thin slice lengthwise off potatoes to create a flat surface for grilling. Making sure not to cut all the way through, make vertical slits about 3/4-inch deep every 1/8-inch. Brush potatoes evenly with garlic mixture.
- Transfer potatoes to an indirect-heat rack in grill. Close lid and grill until potatoes fanned slices are soft and slightly separated, about 45 minutes. Transfer to a plate, brush with remaining oil and let cool 10 minutes before serving with Parmesan and toppings of choice.
