10 Serving(s)

Ingredients
- 1 cup leftover cooked turkey, chopped
- 1 cup leftover mashed potatoes
- 2/3 cup leftover stuffing
- 10 egg roll wrappers
- 1 large Schnucks egg beaten
- 1/4 cup water
- 1 cup Schnucks vegetable oil, from frying
- 1/2 cup leftover cranberry sauce
- 1/4 cup Schnucks maple syrup
Instructions
- In a medium bowl, stir together turkey, mashed potatoes, green beans and stuffing.
- In a small bowl, whisk together egg and water. Place one egg roll wrapper on a clean work surface with a corner pointing toward you, forming a diamond shape. Brush edges with egg wash. Spoon about 1/3 cup turkey mixture just below center, shaping it into a short horizontal log. Fold bottom corner up over filling, tuck snugly around filling, then fold left and right corners inward. Roll tightly toward top corner, pressing to seal. Repeat with remaining wrappers and filling.
- Heat oil in a large skillet over medium until it reaches 350 degrees. Fry egg rolls in batches, turning occasionally, 4–5 minutes or until golden brown. Transfer to a paper towel-lined plate.
- Meanwhile, in a small saucepan over medium, cook cranberry sauce and maple syrup, stirring occasionally, until warmed through, 2–3 minutes. Serve egg rolls with cranberry sauce.
Chef’s Tip
Skip the frying! Lightly coat egg rolls with cooking spray and bake at 425 degrees for 15-18 minutes, turning halfway through, or air fry at 375 degrees for 8-10 minutes, turning halfway through, until golden brown and crisp.
