Duke's Mayo Pimento Cheese

Each pimento cheese recipe is different and delicious in its own right – from the simple classics passed down through generations to trendier revivals of the historic spread, we’ve never met a pimento cheese we didn’t love. Our classic recipe is tried and true, gracing family gatherings and parties.

Ingredients

  • 3/4 cup Duke's Mayonnaise
  • 12 oz. extra sharp cheddar cheese
  • 12 oz. Vermont white cheddar cheese
  • 1 small onion
  • 1 (4 oz.) jar pimentos

Instructions

  1. Drain pimentos.
  2. Place onion quarters in bowl of food processor fitted with steel blade and pulse until finely chopped.
  3. Add drained pimentos and pulse again.
  4. Scrape into a large bowl.
  5. Grate the cheese either with the food processor or by hand and then combine with the onion and pimento mixture.
  6. Mix thoroughly with Duke's Mayonnaise.
