Cucumber-Pineapple Tropical Crunch Salad

Ingredients
- 2 tbsp. fresh lime juice
- 1 tbsp. Schnucks olive oil
- 1/4 tsp. kosher salt
- 3 cups Schnucks cut pineapple
- 1 medium English cucumber, sliced into half-moons
- 2 tbsp. finely diced red onion
- 1/4 cup fresh chopped cilantro
- crushed red pepper, for garnish
Instructions
- In a large bowl, whisk together lime juice, oil and salt. Add pineapple, cucumber and red onion. Toss gently to coat. Let stand at room temperature 5 minutes to allow flavors to blend. Fold in cilantro before serving and garnish with red pepper.
