Crispy Sushi Waffle With Spicy Tuna

Ingredients

  • 2 cups cooked and cooled rice
  • 1/2 cup rice vinegar
  • 1 tsp. Schnucks sugar
  • 2 tbsp. Schnucks vegetable oil
  • 8 oz. fresh sushi-grade tuna, diced
  • 1/4 cup Schnucks mayonnaise
  • 1 tbsp. sriracha, plus more for garnish
  • 1 tsp. Schnucks soy sauce
  • 1/2 tsp. sesame oil
  • 1 avocado, sliced
  • sesame seeds, for garnish
  • sliced green onion, for garnish

Instructions

  1. In a medium bowl, stir together rice, vinegar and sugar. Preheat a waffle iron and brush lightly with oil. Press 2 cups rice mixture into waffle iron in an even layer. Close and cook until golden and crispy, 8–10 minutes. Transfer to a serving plate.
  2. In the same bowl, gently stir together tuna, mayonnaise, sriracha, soy sauce and sesame oil. Top waffle with avocado, tuna mixture and garnish with sesame seeds, green onion and a drizzle of sriracha. Serve immediately.

Chef tip:

  1. Swap tuna for smoked salmon to add savory flavor while skipping the need for raw, sushi-grade seafood.
  2. Turn this into a Crispy Rice Waffle With Mango Salad. Follow Step 1. Then, in the same bowl, gently toss 2 cups diced mango, 1/2 cup chopped imitation crab meat, 1/2 cup diced cucumber and 1/4 cup shredded carrot with 2 tablespoons mayonnaise, 1 teaspoon honey, 1/2 teaspoon sesame oil and 1/2 teaspoon soy sauce until evenly coated. Spoon over waffle and garnish with 2 tablespoons sliced green onion. Serve immediately.
