Crispy Sushi Waffle With Spicy Tuna

Ingredients
- 2 cups cooked and cooled rice
- 1/2 cup rice vinegar
- 1 tsp. Schnucks sugar
- 2 tbsp. Schnucks vegetable oil
- 8 oz. fresh sushi-grade tuna, diced
- 1/4 cup Schnucks mayonnaise
- 1 tbsp. sriracha, plus more for garnish
- 1 tsp. Schnucks soy sauce
- 1/2 tsp. sesame oil
- 1 avocado, sliced
- sesame seeds, for garnish
- sliced green onion, for garnish
Instructions
- In a medium bowl, stir together rice, vinegar and sugar. Preheat a waffle iron and brush lightly with oil. Press 2 cups rice mixture into waffle iron in an even layer. Close and cook until golden and crispy, 8–10 minutes. Transfer to a serving plate.
- In the same bowl, gently stir together tuna, mayonnaise, sriracha, soy sauce and sesame oil. Top waffle with avocado, tuna mixture and garnish with sesame seeds, green onion and a drizzle of sriracha. Serve immediately.
