Ingredients
- 1 (12 oz.) pkg. smoked turkey sausage, slice into 1/4-inch rounds
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 2 tsp. Schnucks Cajun seasoning
- 1 (15 oz.) can Schnucks cannellini beans, drained and rinsed
- 3 cups Schnucks 33%-less-sodium chicken broth
- 1 1/2 cups chopped kale
- 1/2 cup Schnucks nonfat plain Greek yogurt
- 3 tbsp. sliced green onions, for garnish
- 4 pieces Schnucks cornbread, for serving
Instructions
- Heat a large saucepan over medium. Add sausage and cook, stirring occasionally, 4–5 minutes or until lightly browned. Transfer to a plate.
- In same saucepan, add yellow onion and bell pepper. Cook, stirring occasionally, 4–5 minutes or until softened. Stir in garlic and Cajun seasoning; cook 30 seconds.
- Stir in beans and broth. Bring to a simmer, uncovered, and cook 10 minutes. Stir in kale and reserved sausage. Simmer 1–2 minutes or until kale is wilted.
- Remove from heat and stir in Greek yogurt until smooth. Top with green onions and serve immediately with cornbread.
Chef’s Tip
Removing the pan from heat before stirring in the Greek yogurt keeps it smooth and creamy.
