Cottage Cheese Stuffed Mini Peppers
These Cottage-Cheese Stuffed Mini Peppers are a super simple snack that packs in fresh, satisfying flavor. They can be served cold or hot, whichever you prefer!

Ingredients
- 1 dozen mini sweet peppers
- 1/2 cup Schnucks low fat cottage cheese
- 1 tbsp. fresh chopped dill
- 2 tbsp. everything bagel seasoning
Instructions
- On a cutting board, halve peppers lengthwise and scoop out seeds, keeping stems intact. Transfer cut sides up to a sheet pan.
- In a small bowl, stir together cottage cheese and dill. Season with salt and black pepper, if desired. Spread cheese mixture into peppers and sprinkle with everything-bagel seasoning. Refrigerate, covered, until ready to serve.
