Cottage Cheese Stuffed Mini Peppers

Ingredients

  • 1 dozen mini sweet peppers
  • 1/2 cup Schnucks low fat cottage cheese
  • 1 tbsp. fresh chopped dill
  • 2 tbsp. everything bagel seasoning

Instructions

  1. On a cutting board, halve peppers lengthwise and scoop out seeds, keeping stems intact. Transfer cut sides up to a sheet pan.
  2. In a small bowl, stir together cottage cheese and dill. Season with salt and black pepper, if desired. Spread cheese mixture into peppers and sprinkle with everything-bagel seasoning. Refrigerate, covered, until ready to serve.
