Chickpea and Charred-Peach Salad With Honey-Lime Crema

Ingredients
- 4 peaches, halved and pitted
- 3 tbsp. Schnucks cilantro-lime cream sauce
- 2 tbsp. Schnucks olive oil
- 1 tbsp. fresh lime juice
- 2 tsp. Schnucks honey
- 2 (15 oz.) cans Schucks chickpeas, rinsed and drained
- 1/2 small red onion, thinly sliced
- 1/2 cup crumbled feta
- 1/2 cup whole fresh mint leaves, divided
- 1/2 cup toasted pistachios
Instructions
- On a grill pan over medium-high heat, arrange peaches cut side down. Cook until charred, 3–4 minutes. Let cool slightly, then cut into wedges.
- In a large bowl, whisk together cilantro-lime crema, oil, lime juice and honey until smooth. Season with salt and pepper, if desired. Gently fold in chickpeas, red onion, feta, 1/4 cup mint leaves and the pistachios until evenly coated.
- Transfer to a platter and top with charred peaches. Serve garnished with remaining mint and, if desired, fresh cracked pepper.
