Chicken Koftas With Hummus and Crunchy Salad

Ingredients
- 1 lb. 93%-lean ground chicken
- 1 large Schnucks egg
- 1/2 cup Schnucks plain panko breadcrumbs
- 3 tsp. minced garlic
- 1 tbsp. Greek seasoning
- 1 red onion, half diced and half sliced
- 2 1/2 tbsp. Schnucks olive oil, divided, plus more for drizzling
- 3 cups chopped cucumber
- 2 cups halved cherry tomatoes
- 1 1/2 tbsp. fresh lemon juice
- 1/2 cup Schnucks classic hummus
- 1/2 cup Schnucks nonfat plain Greek yogurt
- mint leaves, for garnish
Instructions
- In a large bowl, mix together ground chicken, egg, panko, garlic, seasoning and diced onion until just combined. If desired, season with salt and pepper. Shape into 14 oval patties (about 2 tablespoons each).
- In a large skillet over medium heat, add 1 tablespoon oil. Working in batches as needed, cook koftas until browned and internal temperature reaches 165 degrees, 3–4 minutes per side.
- In a large bowl, toss together cucumber, tomatoes, sliced onion, lemon juice and remaining oil. Season with salt and pepper, if desired.
- In a small bowl, stir together hummus and yogurt. Serve with koftas and salad garnished with mint leaves and a drizzle of oil.
