Cheesy Chicken Parmesan

Ingredients
- 1 (8.8 oz) pkg. Culinaria Italian Table egg fettuccine
- 4 Schnucks boneless skinless chicken breasts
- 1/4 cup Schnucks all-purpose flour
- 2 large Schnucks eggs, beaten
- 2 cups Culinaria Italian Table Italian bread crumbs
- 1 cup Schnucks grated Parmesan cheese, divided
- 3/4 cup Culinaria Italian Table Sicilia extra-virgin olive oil
- 1 cup Culinaria Italian Table tomato basil pasta sauce
- 1/4 cup Schnucks mozzarella pearls
- 2 tbsp. Culinaria Italian Table pesto Genovese, for garnish
- 1/4 cup chopped fresh basil, for garnish
Instructions
- Preheat oven to 450 degrees. Coat a 9x13-inch baking dish with cooking spray. Cook fettuccine according to package directions.
- Meanwhile, place chicken between two sheets of plastic wrap and pound to 1/4-inch thickness. Season with salt and pepper, if desired.
- Place flour, eggs and breadcrumbs mixed with 1/2 cup Parmesan in separate shallow dishes. Dredge chicken in flour, dip in eggs, then coat with breadcrumb mixture, pressing gently to adhere.
- Heat oil in a large skillet over medium-high. Working in batches, if needed, cook chicken until golden brown, about 2 minutes per side. Transfer to prepared baking dish.
- Top chicken with pasta sauce, mozzarella and pesto. Bake until cheese is melted and chicken reaches an internal temperature of 165 degrees, 10–15 minutes.
- Serve chicken over fettuccine. Garnish with remaining Parmesan and basil.
