Blueberry-Greek Yogurt Bites

Ingredients
- 1/4 cup fresh blueberries
- 1 1/2 tsp. water
- 1 1/2 cups Schnucks nonfat vanilla Greek yogurt
- 2 tbsp. Schnucks honey
- 1/2 tsp. Schnucks pure vanilla extract
Instructions
- In a microwave-safe bowl, add blueberries and water. Microwave until berries release their juices, about 1 minute. Lightly mash with a fork, then let cool 5 minutes.
- In a medium bowl, stir together yogurt, honey and vanilla until smooth. Spoon into silicone molds, about 1 tbsp. each, then top with mashed blueberries. Using a toothpick, gently swirl blueberries into yogurt in a circular motion.
- Freeze until fully set, about 2 hours. Remove from molds and store in an airtight container up to 2 months until ready to serve.
Chef tip: Store yogurt bites in a single layer with parchment between layers. For a creamier texture, let stand 2–5 minutes before serving. Avoid refreezing to prevent ice crystals.
