Blackberry Glazed Pork With Crispy Potatoes

Ingredients
- 1 (24 oz.) bag petite-potato medley
- 1 lb. pork tenderloin
- 1 tbsp. Schnucks canola oil
- 1/2 tsp. Schnucks Italian seasoning
- 1 cup fresh blackberries, plus more for garnish
- 1 tbsp. Schnucks apple cider vinegar
- 1 tsp. Schnucks Dijon mustard
- 1 tsp. minced garlic
- 1 tsp. Schnucks honey
Instructions
- Preheat oven to 425 degrees. Cut potatoes in half.
- Arrange potatoes and pork on a parchment paper–lined sheet pan. Drizzle with oil and sprinkle with Italian seasoning. Roast until pork’s internal temperature reaches 145 degrees, 20–25 minutes. Remove from oven and let pork rest 5 minutes before slicing.
- Meanwhile, in a small saucepan over medium heat, stir in remaining ingredients. Simmer, lightly mashing berries, until slightly thickened, 5–7 minutes. Pour over pork garnished with extra fresh blackberries and serve with potatoes.
