Bewitching Chocolate Bean Cupcakes

Delight folks of all ages with surprisingly moist, gluten-free chocolate cupcakes topped with vibrant green cream cheese frosting.

Ingredients

  • 1 (15.25 oz.) can Schnucks black beans, drained and rinsed
  • 3 large Schnucks eggs
  • 1/3 cup Schnucks canola oil
  • 1 (15 oz.) box Full Circle gluten free devil's food cake mix
  • 1 (16 oz.) container vanilla frosting
  • 4 oz. Schnucks cream cheese, softened
  • 2 drops green food coloring
  • halloween sprinkles, for garnish

Instructions

  1. Preheat oven to 350 degrees. Line a 12-cup muffin pan with paper liners.
  2. In a blender or food processor, mix black beans, eggs and oil until smooth. Transfer to a large bowl; stir in cake mix until just combined. Divide batter evenly among prepared muffin cups, filling each about two-thirds full.
  3. Bake 18–22 minutes or until a toothpick inserted into the centers comes out clean. Cool in pan 10 minutes; transfer to a wire rack and cool completely, about 30 minutes.
  4. Meanwhile, beat frosting, cream cheese and food coloring until smooth and evenly tinted. Spread or pipe onto cooled cupcakes. If desired, top with halloween sprinkles and serve.

Chef’s Tip: Top each cupcake with a simple witch hat made from Crav’n Flavor fudgy covered cookies and chocolate Hershey's Kiss, using a small dollop of frosting to hold them together.
