Ingredients
- 4 medium heirloom tomatoes, sliced
- 1/2 tsp. Kosher salt
- 3 tbsp. Schnucks olive oil
- 1 tbsp. red wine vinegar
- 1 tsp. fresh lemon juice
- 1 tsp. finely minced garlic
- 1/4 tsp. black pepper
- 1/4 tsp. Schnucks sugar
- 2 tbsp. torn fresh basil leaves, plus more for garnish
- 1 tbsp. chopped fresh parsley, plus more for garnish
Instructions
- Arrange tomatoes, overlapping slightly, on a platter. Sprinkle with salt and let stand until juices begin to release, 5–10 minutes.
- In a small bowl, whisk together oil, red wine vinegar, lemon juice, garlic, pepper and sugar until well combined. Drizzle evenly over tomatoes, then sprinkle with basil and parsley. Let marinate, uncovered, 10 minutes.
- Spoon any marinade pooled on platter over tomatoes. Garnish with additional basil and parsley just before serving.
