Basil-Edamame Toast With Cucumber

Ingredients

  • 4 slices Schnucks sourdough bread
  • 1 cup frozen shelled edamame, thawed, plus more for garnish
  • 1/4 cup fresh basil
  • 2 tbsp. Schnucks olive oil, plus more for garnish
  • 1 lemon, zested and juiced
  • 1 medium English cucumber
  • 1/4 cup sliced pickled red onion
  • 2 tbsp. chopped cilantro, for garnish

Instructions

  1. In a toaster, toast bread until golden, about 4 minutes.
  2. Meanwhile, in a blender or food processor, add edamame, basil, oil and 1 tablespoon lemon juice. Season with salt and pepper, if desired. Pulse until slightly chunky yet spreadable, 30–45 seconds.
  3. Using a peeler, shave cucumber lengthwise into long ribbons, rotating as you go.
  4. Spread edamame mixture evenly on toast. Top with cucumber ribbons and red onion. Garnish with whole edamame, cilantro, lemon zest and a drizzle of oil. Serve immediately.
