Basil-Edamame Toast With Cucumber

Ingredients
- 4 slices Schnucks sourdough bread
- 1 cup frozen shelled edamame, thawed, plus more for garnish
- 1/4 cup fresh basil
- 2 tbsp. Schnucks olive oil, plus more for garnish
- 1 lemon, zested and juiced
- 1 medium English cucumber
- 1/4 cup sliced pickled red onion
- 2 tbsp. chopped cilantro, for garnish
Instructions
- In a toaster, toast bread until golden, about 4 minutes.
- Meanwhile, in a blender or food processor, add edamame, basil, oil and 1 tablespoon lemon juice. Season with salt and pepper, if desired. Pulse until slightly chunky yet spreadable, 30–45 seconds.
- Using a peeler, shave cucumber lengthwise into long ribbons, rotating as you go.
- Spread edamame mixture evenly on toast. Top with cucumber ribbons and red onion. Garnish with whole edamame, cilantro, lemon zest and a drizzle of oil. Serve immediately.
