Baja Turkey-Pasta Salad

Ingredients
- 8 oz. Barilla Protein+ penne
- 1 tbsp. Schnucks olive oil
- 1 lb. lean ground turkey
- 2 tbsp. Schnucks taco seasoning
- 1/2 cup water
- 1/2 cup Schnucks Greek yogurt
- 1/4 cup salsa verde
- 1 tbsp. fresh lime juice
- 1 cup Schnucks frozen corn, thawed
- 1 cup Schnucks black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped cilantro
Instructions
- Cook pasta according to package directions.
- Meanwhile, in a skillet, heat oil over medium. Add turkey; cook until browned and cooked through, 6–8 minutes. Stir in taco seasoning and water; cook until thickened, 1–2 minutes. Remove from heat and let cool about 5 minutes.
- In a large bowl, whisk together yogurt, salsa verde and lime juice until smooth. Add turkey mixture and pasta; toss to coat. Add corn and remaining ingredients. Gently toss to combine, then divide among 4 airtight containers. Refrigerate up to 4 days until ready to eat.
