Ingredients

  • 2 lb. Schnucks pork tenderloin (2 tenderloins)
  • 1 tbsp. Schnucks olive oil
  • 1 tsp. Schnucks garlic powder
  • 1 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 10 slices Schnucks thick-cut bacon
  • 6 tsp. Schnucks unsalted butter
  • 8 fresh sage leaves
  • 1 medium lemon

Instructions

  1. Preheat oven to 400 degrees. Line a sheet pan with foil. Place a wire rack inside pan and coat rack with cooking spray.
  2. Pat pork dry. Rub with oil, garlic powder, rosemary and thyme; season with salt and pepper, if desired. Wrap bacon around pork, slightly overlapping each slice. Place seam-side down on prepared rack.
  3. Roast 30–35 minutes or until bacon is crisp and pork reaches an internal temperature of 145 degrees. Remove from oven and let rest 10 minutes.
  4. Meanwhile, melt butter in a small skillet over medium. Add sage leaves and cook, turning once, 1–2 minutes or until crisp. Transfer sage to a paper towel-lined plate. Continue cooking butter, swirling occasionally, 2–3 minutes or until golden brown. Remove from heat. Juice half the lemon and stir 1 tbsp. juice into butter.
  5. Slice pork into medallions and arrange on a serving platter. Spoon brown butter over pork. Top with crispy sage and garnish with lemon slices cut from remaining lemon. Serve immediately.

Chef’s Tip

Roast pork directly on a foil-lined sheet pan, turning once halfway through cooking for evenly browned bacon.
