Apple Cider Chicken Skillet With Side Salad

Ingredients

  • 2 tbsp. Schnucks olive oil, divided
  • 1 lb. Schnucks bone-in, skin-on chicken thighs
  • 1/2 tsp. Schnucks ground allspice
  • 1 small yellow onion, thinly sliced
  • 2 medium Pink Lady apples, cored and sliced
  • 3/4 cup apple cider, plus 1 tbsp. for salad
  • 4 tsp. Schnucks Dijon mustard, divided
  • 1 tsp. Schnucks dried oregano
  • 4 cups fresh arugula
  • 1/2 cup shredded carrot
  • 2 tbsp. crumbled queso fresco

Instructions

  1. In a large skillet over medium heat, add 1 tablespoon oil and swirl to coat. Season chicken with allspice and, if desired, salt. Sear until golden, 3–5 minutes per side. Remove from pan.
  2. Stir onion and apple into skillet. Cook until softened, about 5 minutes. Stir in 3/4 cup cider, 1 tablespoon Dijon and the oregano. Return chicken to skillet.
  3. Reduce heat to medium-low. Cook, covered, stirring occasionally, until chicken’s internal temperature reaches 165 degrees and sauce has reduced slightly, 10–15 minutes.
  4. In a large bowl, whisk together remaining 1 tablespoon oil, 1 tablespoon apple cider and 1 teaspoon Dijon. Add arugula, carrot and queso fresco. Season with salt and pepper, if desired, and toss to coat. Serve with chicken.
