Apple Cider Chicken Skillet With Side Salad

Ingredients
- 2 tbsp. Schnucks olive oil, divided
- 1 lb. Schnucks bone-in, skin-on chicken thighs
- 1/2 tsp. Schnucks ground allspice
- 1 small yellow onion, thinly sliced
- 2 medium Pink Lady apples, cored and sliced
- 3/4 cup apple cider, plus 1 tbsp. for salad
- 4 tsp. Schnucks Dijon mustard, divided
- 1 tsp. Schnucks dried oregano
- 4 cups fresh arugula
- 1/2 cup shredded carrot
- 2 tbsp. crumbled queso fresco
Instructions
- In a large skillet over medium heat, add 1 tablespoon oil and swirl to coat. Season chicken with allspice and, if desired, salt. Sear until golden, 3β5 minutes per side. Remove from pan.
- Stir onion and apple into skillet. Cook until softened, about 5 minutes. Stir in 3/4 cup cider, 1 tablespoon Dijon and the oregano. Return chicken to skillet.
- Reduce heat to medium-low. Cook, covered, stirring occasionally, until chickenβs internal temperature reaches 165 degrees and sauce has reduced slightly, 10β15 minutes.
- In a large bowl, whisk together remaining 1 tablespoon oil, 1 tablespoon apple cider and 1 teaspoon Dijon. Add arugula, carrot and queso fresco. Season with salt and pepper, if desired, and toss to coat. Serve with chicken.
