4-Way Sheet Pan Eggs

Ingredients
- 18 large Schnucks eggs
- 1 1/2 cups Schnucks 2% milk
- 1 tbsp. Schnucks butter, melted
- 1/2 cup chopped Prime Fresh smoked ham
- 1/2 cup diced red and/or green bell peppers
- 1/2 cup chopped fresh spinach
- 2 cups Schnucks low-fat cottage cheese
Instructions
- Preheat oven to 350 degrees. Line a 9x13-inch sheet pan with parchment paper, then brush with melted butter until fully coated.
- In a large bowl, add eggs and milk and, if desired, season with salt and black pepper. Whisk together until slightly frothy, about 1 minute, then pour into prepared pan. Sprinkle one-quarter of sheet pan with cheese, ham in another quarter, bell peppers in another quarter and spinach in remaining quarter.
- Bake until eggs are set in center, 25–30 minutes. Let cool until firm enough to cut cleanly, about 5 minutes. Cut into quarters along section lines, then cut each quarter into 4 pieces. Serve with cottage cheese.
Chef tip: Bake once and enjoy all week. Pair egg squares with croissants, bagels or bread for quick sandwiches. Let cool completely, then store in an airtight container (in a single layer or with parchment between layers). Refrigerate up to 4 days or freeze up to 2 months.
