4-Way Sheet Pan Eggs

Ingredients

  • 18 large Schnucks eggs
  • 1 1/2 cups Schnucks 2% milk
  • 1 tbsp. Schnucks butter, melted
  • 1/2 cup chopped Prime Fresh smoked ham
  • 1/2 cup diced red and/or green bell peppers
  • 1/2 cup chopped fresh spinach
  • 2 cups Schnucks low-fat cottage cheese

Instructions

  1. Preheat oven to 350 degrees. Line a 9x13-inch sheet pan with parchment paper, then brush with melted butter until fully coated.
  2. In a large bowl, add eggs and milk and, if desired, season with salt and black pepper. Whisk together until slightly frothy, about 1 minute, then pour into prepared pan. Sprinkle one-quarter of sheet pan with cheese, ham in another quarter, bell peppers in another quarter and spinach in remaining quarter.
  3. Bake until eggs are set in center, 25–30 minutes. Let cool until firm enough to cut cleanly, about 5 minutes. Cut into quarters along section lines, then cut each quarter into 4 pieces. Serve with cottage cheese.

Chef tip: Bake once and enjoy all week. Pair egg squares with croissants, bagels or bread for quick sandwiches. Let cool completely, then store in an airtight container (in a single layer or with parchment between layers). Refrigerate up to 4 days or freeze up to 2 months.
