Veggie Loaded Baked Potatoes

Ingredients

  • 4 large russet potatoes
  • 1 avocado, chopped
  • 1/2 cup Schnucks shredded mozzarella cheese
  • 1/2 cup broccoli, steamed and chopped
  • 1/4 cup Greek yogurt
  • 2 tbsp. chopped parsley
  • 1 tbsp. Schnucks taco seasoning

Instructions

  1. Use a fork to poke holes in potatoes.
  2. Microwave potatoes on high for 5 minutes. Flip potatoes and continue cooking until tender, about 5 additional minutes.
  3. Cut potatoes in half and top with your favorite toppings. Finish with a sprinkle of taco seasoning (if desired).
