Turkey Meatballs With Pumpkin-Sage Spaghetti

Ingredients
- 1 lb. 93%-lean ground turkey
- 1/2 cup yellow onion, chopped
- 1 tbsp. Schnucks dried parsley
- 2 tsp. minced garlic
- 8 oz. Schnucks spaghetti
- 1 tbsp. Schnucks olive oil
- 2 tbsp. Schnucks tomato paste
- 1 tbsp. Schnucks butter
- 1 cup Schnucks canned pumpkin purée
- 4 tbsp. Schnucks shaved Parmesan cheese
- 1 tsp. chopped sage, plus leaves for garnish
Instructions
- In a bowl, add turkey, onion, parsley, garlic and, if desired, salt and pepper. Mix together until well combined, then form into 16 (1-inch-round) meatballs. Refrigerate 10 minutes.
- Meanwhile, cook spaghetti according to package directions. Drain, reserving 1 cup pasta water.
- In a large skillet, heat oil over medium. Working in batches as needed, cook meatballs on all sides until internal temperature reaches 160 degrees, 10–15 minutes. Transfer to a plate and cover to keep warm.
- In same skillet, add tomato paste, butter and reserved pasta water. Cook, stirring, until well incorporated, 1–2 minutes. Stir in pumpkin purée and chopped sage. Simmer until smooth, 3–5 minutes.
- Return spaghetti to skillet and toss to coat. Serve with meatballs, garnished with Parmesan and sage leaves.
