Thai Turkey Lettuce Wraps
These Thai Turkey Lettuce Wraps are a light and flavorful meal, with tender ground turkey, fresh herbs and crisp lettuce. They’re perfect for an energizing, satisfying lunch or dinner.

Ingredients
- 1/4 cup brown basmati rice
- 1 tbsp. vegetable oil
- 1 lb. ground turkey
- 3 garlic cloves, minced
- 1/4 cup sweet chili sauce
- 2 limes, juiced (about 4 tbsp.)
- 2 tbsp. less-sodium soy sauce
- 1/2 tsp. black pepper
- 1/4 cup very thinly sliced red onion
- 1 tsp. chopped fresh mint (or 1/4 tsp. dried)
- 1/4 cup shredded carrot
- 8 butter lettuce leaves
- 1 tbsp. chopped fresh basil, for garnish
- 1 tbsp. chopped fresh cilantro, for garnish
Instructions
- In a large skillet over medium-high heat, toast rice, shaking skillet constantly, about 3 minutes. Transfer to a bowl to cool.
- Add oil, turkey and garlic to skillet. Cook, stirring and breaking turkey into small pieces, 2 minutes.
- In a food processor or blender, add toasted rice; process until ground. Stir into skillet along with chili sauce, lime juice, soy sauce, pepper and 3 tablespoons water. Cover, reduce heat to medium-low and simmer until liquid is absorbed, 8–10 minutes.
- Remove from heat and stir in red onion, mint and carrot. Divide turkey mixture among lettuce leaves. Garnish with basil and cilantro; serve immediately.
No Fresh Herbs?
Use 1 teaspoon each of dried basil and cilantro.
