Thai Turkey Lettuce Wraps

Ingredients

  • 1/4 cup brown basmati rice
  • 1 tbsp. vegetable oil
  • 1 lb. ground turkey
  • 3 garlic cloves, minced
  • 1/4 cup sweet chili sauce
  • 2 limes, juiced (about 4 tbsp.)
  • 2 tbsp. less-sodium soy sauce
  • 1/2 tsp. black pepper
  • 1/4 cup very thinly sliced red onion
  • 1 tsp. chopped fresh mint (or 1/4 tsp. dried)
  • 1/4 cup shredded carrot
  • 8 butter lettuce leaves
  • 1 tbsp. chopped fresh basil, for garnish
  • 1 tbsp. chopped fresh cilantro, for garnish

Instructions

  1. In a large skillet over medium-high heat, toast rice, shaking skillet constantly, about 3 minutes. Transfer to a bowl to cool.
  2. Add oil, turkey and garlic to skillet. Cook, stirring and breaking turkey into small pieces, 2 minutes.
  3. In a food processor or blender, add toasted rice; process until ground. Stir into skillet along with chili sauce, lime juice, soy sauce, pepper and 3 tablespoons water. Cover, reduce heat to medium-low and simmer until liquid is absorbed, 8–10 minutes.
  4. Remove from heat and stir in red onion, mint and carrot. Divide turkey mixture among lettuce leaves. Garnish with basil and cilantro; serve immediately.

No Fresh Herbs?

Use 1 teaspoon each of dried basil and cilantro.
