Sweet Potato Black Bean Tacos

Ingredients
- 1 bag (12 oz.) steam-in-bag chopped sweet potatoes
- 1 pkg. (1.25oz.) Schnucks low-sodium taco seasoning mix
- 1 tbsp. olive oil
- 1 can (15 oz.) Schnucks no-salt-added black beans, rinsed and drained
- 8 (6-inch) Schnucks corn tortillas, warmed
- 1 pkg. (10 oz.) Schnucks Short Cuts pico de gallo
- 1 avocado, peeled, pitted and diced
Instructions
- Microwave sweet potatoes according to package directions; transfer to a large bowl. Sprinkle with taco seasoning and toss to coat.
- Heat oil in a skillet over medium-high until hot. Add sweet potatoes; cook, stirring occasionally, until browned and crispy, 5–8 minutes. Add black beans; cook, stirring occasionally, until heated through, about 5 minutes.
- Serve with tortillas, pico de gallo and avocado.
