Sweet Potato Black Bean Quesadillas

Ingredients
- 1/2 tbsp. Schnucks vegetable oil
- 1 medium sweet potato, peeled & diced
- 1 large red bell pepper, seeded & diced
- 1 tsp. minced garlic
- 1/2 tsp. cumin
- 1/4 tsp. oregano
- 1/4 tsp. cayenne pepper
- 1 cup chopped fresh spinach
- 1/2 cup Schnucks no-salt-added black beans, rinsed
- 1/2 cup frozen cauliflower rice
- 1/2 cup fresh pico de gallo
- 4 Schnucks 8-inch whole-wheat tortillas
- 3/4 cup Schnucks reduced fat Mexican style shredded cheese
Instructions
- In a large skillet, heat oil over medium-high 1 minute. Add sweet potato, bell pepper and garlic; cook until lightly browned, about 10 minutes.
- Stir in seasonings, spinach, black beans and cauliflower rice until combined; cook 2 minutes. Season with salt and black pepper, if desired. Remove from heat and stir in pico de gallo. Set aside.
- Wipe out skillet and return to stovetop over medium-low heat. Lay one tortilla in pan; top with 3 tablespoons cheese and one-quarter of sweet potato mixture.
- Cook until cheese is melted, 3–5 minutes. Fold tortilla in half, transfer to a cutting board and slice into thirds. Repeat with remaining tortillas. Serve immediately.
