Sunny Couscous Salad

Ingredients
- 1 cup pearl couscous
- 2 tbsp. Schnucks olive oil, divided
- 1 tsp. Schnucks seasoned salt
- 1/2 tsp. Schnucks cumin
- 1 lemon, zested and juiced (about 2 tbsp. juice)
- 1 cup cherry tomatoes, halved (about 2/3 pint)
- 1 cup English cucumber, diced
- 1/2 cup Culinaria Kalamata olives, chopped
- 1/2 cup fresh curly leaf parsley, minced
- 1/4 cup red onion, diced
- 1 (6 oz.) bag crunchy chickpeas (garbanzo beans)
Instructions
- Cook couscous according to package directions and chill at least 10 minutes.
- In a large mixing bowl, whisk together oil with seasoned salt, cumin, lemon zest and lemon juice. Season with salt and pepper, if desired. Add remaining ingredients and gently toss to combine. Garnish with lemon wedges, if desired, and serve immediately.
